Agree with griffin447 about 21" alloys - they look good but the ride on standard suspension will be firm. Air suspension will help if you want to go with the 21" rims.
Apropos drive modes, Volvo information is inconsistent. The manual claims there are comfort, dynamic and off-road modes but in this 'latest information', also from Volvo, the only extra mode available is Off Road:

There are supposed to be more drive modes on the recharge models according to both Volvo UK and my local dealer. However again, this may be another software update…
