As I understand the physics of it. As soon as the brakes are sufficient to lock the wheels at high speed, the advantage of bigger brakes is larger thermal capacity, bigger braking surface and so less fade, more endurance and longer life on the road. Downside is bigger rotating mass and unsprung weight. I suppose technically, you want the smallest brakes possible, that don't suffer fade or too short a service interval for your usage.
