It would restart and drive fine again but if you done the same again it would die. Accelerating smoothly wouldn't produce any issues at all. I'm hedging my bets on it being the turbo but fingers crossed it's not.

Sounds like it could be turbo-related. I had a Mercedes with a 3.0v6 Diesel engine that used to do a similar thing. If you booted under 2500 rpm it would go into limp mode. Restart the engine and that would clear the fault until the next time you booted.
It turned out to be a faulty actuator on the turbo and sticking inlet flaps.
