With a bit of trial and error you'd get the stoichiometric ratio near enough for the engine to run. Back in the '70s a friend of my father had a Ford engine in his garage connected to a large alternator to run his household electrics during the regular power cuts that were a feature of British industrial relations back then. The carb was still in place, however the fuel came from a pipe feeding in gas from his household mains via a valve which allowed him to set the 'mixture'. He started it up to show me and, to the young me, it seemed to start and run fine!
