I will double check the minimum thickness for you but i am sure they are 30 mm new and 27 is the minimum i replaced mine after 3-4 years use but no track days.
I would go for the grooved over the drilled they will crack between the drills Ap always supply the new kits with drills unless you ask them other wise.
The new discs will not come with new bells but do get a new set of the allan key bolts and nuts
