Should I replace thermostat?????

Probably loads of previous on this one, but would appreciate some learned advice!
Today I did 1/2 the M25 at a steady 80-90 with the odd burst. Its been cold, hovering around 3-5 degrees C. The temperature gauge really did not want to go much above 4 o'clock. Interior warmed up fine and with blower on and off, same engine temp reading. The engine seemed quite lumpy although there was plenty of go. Fuel consumption was not great, around 22-25??? for the trip of 135 miles.
1. Is it the weather and cold motorway cruising or the 'stat?
2. Will it make the engine run rich and explain the 'lumpiness'
3. Didn't check oil and probably could do with a top up, but what is 'typical' oil useage on a manual 850 T5 with 78k up? Other than dealer annual/10k service I may add 1 litre or so.
