If adjusting the carb makes little or no difference you have an air leak somewhere, Adjusting the mixture screw on the carb alters the fuel/air mix, if you have too much air getting into the carb it will not adjust correctly and cause the uneven idle.
Whilst the engine is running try spraying WD40 around the carb/carb mountings and associated components, listen for any change in the engine tickover and watch for bubbles or fluid being sucked in.

All the accosiated plumbing around the carb correct?
One of the pipes has a restrictor in it, is it blocked / missing?

Another vote for an air leak. Stevo's advice looks spot on as a starting point.

Blocked idle jet?
I used to have a Renault 5 with the same engine as the 340. I had exactly the same problem, and like you tried all the hoses, checked for air leaks etc. One day I had stripped the carb (again) and noticed that the hole in the idle jet did not look round when I held it up to the light, so I poked it out with a stiff bristle from a brush (don't use wire) put everything back together and it was cured.

well after replacing the carb which fixed the problem i did a little research and i replaced the solenoid on the old carb and re-fitted it and it runs fine now

wish i knew that was all it needed before i went and bought another carb lol

ah well so long as its running good .. thats the important thing.

so i find myself with a spare carb if anyone wants one... make me an offer

They are getting hard to find.
