If you start a car that way then the whole electrical power for the car being jumped will go through the engine/gearbox earthing strap back to the battery on the good car, in addition to the power that the "donor" car is also generating to charge it's own battery which could be another 20-30 amps following a start-up. Because of the resistance in the earthing system, however small, it will increase the earth potential (voltage) at the engine and potentially affect readings from sensors etc. which will be 0v referenced.
