I can't find anything about it searching the internet, but it did something it hasn't done before or since. I've only had it a few days so am still learning, but I assumed what it was doing was because of the ambulance.

If it happens again I will try and get a passenger to record it.

I suspect you experienced the warning signal in the event of a risk of collision.
It's a red flashing icon of a car which appears in the centre of the drivers display and the HUD if you have it. It sometimes activates for no apparent reason. The brakes are also momentarily activated. Look for Pilot Assist and Collision risk warning in your User manual.
As far as I know there is no mechanism for detecting emergency vehicles.

It didn't warn this time so maybe it only happens if you're moving or it's behind you or only for full size ambulances. I'm pretty sure it was for he ambulance as there is not other reason for it, unless I was about to rear end the car in front or something?
You have answered your own question - I suspect you may have been watching the emergency vehicle & perhaps not aware that your were in danger of hitting a person/bike/car in front.
As soon as the car detects that you have made a correcting movement, it will assume you have observed the “danger” and not auto apply the city safe brake system.
You can adjust the sensitivity of the city safe functionality within the Sensus menu if you find it’s too sensitive for your driving style.
