Angle and height are adjustable; make sure the column locking lever is in the fully unlocked i.e. fully down position as it could be that preventing you altering the height ie distance from the floor panel/firewall.

Tyre pressures all looking good.

I have tried the steering adjustment again. I can only adjust the angle, seems the height is stuck, even with a little force to tease some sort of movement there is still no sign of it being adjustable which is rather odd?

Try pushing the column down after unlocking, then try pulling the wheel up.

Both front tyre pressures checked and are both what they should be.

Have noticed now the radio isn't on there is a whine / humming which changes based on wheel speed which seems to be coming from the drivers side front.

I imagine it's a wheel bearing, but after 10 / 15 minutes the noise has nearly disappeared, maybe it gets warmer?

Thinking now maybe a bad front wheel bearing could give unusual steering sensations?

Will take a look tomorrow and see regarding the pads.

The noise does seem to be similar to bad wheel bearings videos I have seen on youtube, just seems odd that the noise has almost gone after 10 / 15 minutes, almost inline with the engine getting up to temperature.

Check the axle bolts behind the centre cap?

Usual cause of the steering feeling "vague and floaty" at speed is worn shock absorbers. However, given the high winds we've had recently, are you sure it wasn't just crosswinds or even a headwind lifting the front of the car?

Last lot of dead front shocks i experienced, the car wandered from lane to lane with no steering input when i went above a certain speed - i'm taking the 5th Amendment on the exact speed but shall we say motorway speeds+++.

Replacement front shocks, problem solved! Braking was also improved, as was general roadholding/handling and reduced wheelspin so it's worth a check.
