All the parts from Euro were exactly like the ones already on the car luckily! Thanks to everyone who gave tips and hints.

Done the fronts, nearside piece of cake. Offside, absolute pain.

When refitting the caliper with the new disc and pads inserted, it was as though the pads were too fat, so they just clamped the disc and nothing would turn. Caliper was pushed all the way back or certainly seemed to be. Eventually managed to just get everything in with a bit of help lubricating the caliper.

Rears to attempt soon... had a look at the calipers back there and they are also looking very tired, so not sure what to expect. Dust shields also absolutely rotten, would people say this is an essential item to replace or can I ignore it?

Do you mean the metal disc behind the brake disc or some other type of dust shield?

Sounds like maybe your piston is seizing/seized? The piston should go back flush if its fully retracted but you may find it seizes before it gets that far. I replaced both front callipers for that reason.

Sorry to clarify, by dust shield I'm on about the ones that sit behind the rear discs (towards the inside).

And yeah, I'm wondering about seized calipers as now I've occasionally got a slight chafing sound when moving around 1 or 2mph in traffic coming from one of the front wheels, but only sometimes... they didn't look particularly great but I just put that down to lots of dust over time
