Could it be a pressure sensor in the seat to give a seatbelt warning if the seat is occupied, but no seatbelt in place?

Thanks.
If i disconnect it will it show as a fault.
I also want to remove the rear (3rd row) seat belt reels as I have removed the seats. They also have a cable connected to the reels. Will disconnecting those also show as a fault please?

Yes, they will all show as faults.
Reason: they are all part of the critical safety systems designed to save human lives in the event of a crash.
So don't mess with them.
