Yes good idea. Get the live data from the throttle sensors and whatever else you might think useful and go for a spin. Suggest you take someone with you to avoid distractions.

The OP says it happens with Cruise Control on.
So it cannot be the throttle position sensor, as this has no impact unless the driver is deliberately giving extra throttle.

Just to make it clear, the wife has informed me it does it whether cruise is on or off. However this weekend I drive Hull to Stansted airport but decided to put Esso premium diesel in and it didn’t do it once (3 hour drive without stopping)

Perhaps you have dirty injectors. You could use premium fuel for a while and/or run some Liqui-Moly diesel flush through the fuel system.
