I've seen engines on ebay, but I'm wondering if having someone do a re-build for me might make more sense? Or choosing a later model engine with a bit more power or something?

Do not buy from abroad ffs, especially Scandinavia, they charge mental prices!
Put an ad in this forum and see if someone can supply one, or a rebuild kit maybe.

Its probably only your head thats needs TLC anyway.

And maybe get your cylinder head looked at as well....

You want a car in a scrapyard with the same engine as yours : same wiring harness, same plugs, same sensors.
Get them to take the engine out intact and sell it to you.
A lot of scrapyards would even put the engine into your car for a reasonable fee ... maybe. Back in the day.

(I really would not look in evilbay for a 240 engine unless I was an engine-identifying expert)

If 'he' never fitted a vent below the tank, you may need to be careful using these nearby.....

Ok, so no ebay! But in terms of what's my cut off year, this is all new to me. Being that the 240 seemed to run forever, am I really only limited to a 70s engine here?
Would it be worth me looking in the UK for a donor engine, and perhaps having it shipped over here to Ireland?
And if I looked on this site, is there a particular thread I should start, or ...?
