As you say, it sounds like a bird chipring rather than a clicking. I don't have that in my V60.
Assuming you haven't got a budgie trapped in the engine bay somewhere it reminds me of a noise in a previous car of a bit of loose trim or loose component that is shaking under braking and rubbing against something or just flapping about.
If it is consistenly reproducible as in the video, I would be asking the dealer personally.

Thanks. I shared the video with Volvo & they have booked my car in for diagnostic checks.
Will update here if they find something amiss.

Default Got the answer from Volvo :)

After a long follow up and a couple of trips to the dealership, here's the update:
The master tech at the dealership said they had never heard anything like this before although they were able to reproduce it at will.

They referred it to Volvo tech to drill down further & understand the issue.

Volvo tech came back with an official report stating that this sound is by design (strange) & it is prevalent on all cars of same year & type. This happens when the brake actuation of the hydraulic unit is triggered by pilot assist.
So they advised not to change any hardware.

Atleast I have something in writing from Volvo now

Default Volvo XC90 Pilot Assist - brake (Clicking, chirping noise)

I hear the same noise with Volvo XC90 2018 -- dealer checked i.
They did some line replacement, bled the brake - it reduced the noise.

Now it's with same level loudness after 8000 KM -- Volvo Canada aid it was normal.

The noise wasn't there when I bought the vehicle.

Hope it does not cause issues down the line.
