I know what you mean, I feel it gets away from the line quicker if you can control the throttle.

yeh you can, on your dash but it is only partially off. should be on your left stick ,just scroll to the option and hold down the button to turn it off.
Turning off is only really beneficial if driving on snow or ice.

For being stuck in snow I have found it best to leave all driver aids switched on but to apply careful 'dabs' of left-foot braking whilst keeping some power on, the front wheels dig in and grab a bit more traction to get moving, I live on a steep hill

I have actually found quite the opposite unless there is something wrong with my car. in the snow and slush I was coming up the drive and found that the wheels were struggling for any grip at all and this DSTC kept kicking in blunting any progression. After turning it off I actually managed to get going allowing the wheels to spin, it was a huge difference .... but after putting the winter tires on it is defenitly much better with DSTC on

But turning it off at a track day was defenitly faster and if you keep driving hard the Traction control temporarily disabled makes flying round the corners even faster .... and not a single bit of understeer either

Lizard thats probably it, your AWD will have way more grip than our fwd.
