Well I fixed this. It turns out the sleeves on the two choke cables that come from the plate mounted on the firewall were slipping inside their clamp. Tightened the screw and everything is perfect now. Well, except for the car being stuck in London because of the exhaust, but thats a different story.

I'll take a photo and post once I get the car back, as it could help someone else one day.

Ron - The fule pump I have is made by FAI Automotive and does indeed supply 2-3psi and an output of 1.5 ltr/min.
The pump stops when the bowls fill as I see the inline filter before the fuel pump empty and not fill again until the pump starts ticking again.
I have had the dreaded overflow as the car had been sitting when I first got it and it was worrying as the overflow happened as soon as the exhaust manifold got hot. I blasted a fire extinguisher at it !.
As for the switch, well, mine is on the ignition and I will be installing a cutout switch on the dashboard although when you think of it, if I am unable to turn the ignition off after a crash I am also unable to flick a cut out switch ;-)
There is a fuel flow collision safety switch which may be a better idea.
I can see the argument for overflow as the pump is relying on the floats closing the inlet leaving a pressure to go back down the pipes and shut of the pump. If the floats were stuck or weak then yes, 1.5ltr per minute onto a hot exhaust.
Perhaps I should rig up the fuel injection again and ditch the carbs!
