You don't have to use all of the Haltech sensors. You can get things like Honeywell pressure sensors, which is what Haltech sells, you can also get hold of GM Map sensors. On the flip side Haltech provide all of the connectors and pins you'll need for the sensors.
With further digging it seems that Yoshifab has everything I'd need.

The question is, do I need all that to make 300HP or can I do that with a mega squirt, 3 inch MAF, 19T turbo and a decent map?

You can do 300HP with LH2.4.

Linuxman on turbobricks does a plug and play microsquirt system that plugs into the LH2.4 ecu plugs
