Agree there's a lot of conflicting experience around. You can get a 2-year Volvo Warranty - I bought one when my original ran out at 3yrs. It's a little cheaper than two one-years (and locks in the price). I think the confusion comes partly from the fact that you can't get the 2-yr warranty online or over the phone - it has to come from a dealer (I suspect it's because its a financial product and comes under FSA constraints but that's a guess on my part). Not all dealers seem to be interested in selling 2 year extensions - but it can be done.

It will go up each year you renew it, but I've never found out whether that's inflation-linked, or just gradually increasing based on the age of the vehicle. My first year was bang on 600, then upped to ~660 and last year was about 690 so I'm expecting 720-750 for year 4. It's already paid out more than I have though, so no complaints from me. 2017 XC90 T8

When my XC60 turned 3 in January 21, I bought the two year extension for just short of £900. It turned 5 at the end of January this year and I bought a further year for just over £600.
So far, I have not had to use it at all, but I am happy with the peace of mind it has given me. If it is much more than £600 next year, I suspect I would give it a miss.

Our selekt warranty runs out in june, just recieved an offer of another year for £613 , car is, v90 cross country t5, 67 reg with 52000 miles

Just received my quote to renew Volvo warrant on my 2016 (2017 MY) XC90 so will be 7 years old at renewal. £757. Same as last year.

You can renew annually up to 10 years with Volvo warranty, I renewed year 4 at £457 and 5 £607. Not had to use it at all and if that stays as is for the rest of this year will consider letting it slip next year particularly if it becomes around £700. Instead I'll build up a sink fund and take the risk.
If you do let the extension slip you cannot take it up again. Not owning a T8 with ERAD potential issues it's a relatively less complicated car but of course if the VCM or similar goes pop I know that's c£1700. Conversely, if the gesture tailgate failed out of warranty perhaps I wouldn't bother getting it fixed (I had that fixed under 3 years with an updated piece of wiring loom). Depends on your attitude to risk, worst case can always chop the car in for something newer.
