What damage would driving with low/no power steering fluid cause?

You won't get a pump apart, Buy a new pump.
Rack? You'll be lucky that the pump hasn't spat its bearing material down the lines to the rack. I guess you'll find out if you replace the pump. Autodoc, Miele pumps are decent, come with 2-3 litres of fluid to fill and do a semi refresh by replacement. But IF you've stuffed the rack with metal bits, You could be back to square 1, a new pump chewing metal bits up, and no warranty. Only one option, Chuck a new pump at it and see what happens in a few weeks. If you get fluid in the boots, then you'll need a new rack too, and pray that your pump doesn't start making funny noises. |

If you've have had low fluid - i.e. intermittent power assistance - you should be okay.
Even if it's completely run out, you might be alright, all you can do is refill and try it. If it seems ok, I would refresh the fluid after just a few miles and examine it to see if there is any "glitter" in it. There's no filter in the power steering system.
