Right.. Volvo OEM rear brake pads ordered for £47 (including postage) with the anti-rattle springs included. My garage will charge £25 for fitting, might see if I can get them to throw in a free beam realignment too. Hopefully this sorts the problem..

Brake pads arrived, car booked in to get them fitted on the 19th. I'll report back whether there's an improvement or not!

Rear brake pads fitted by my trusted garage today and what a result! The problem is completed resolved - no more noise whatsoever and the car drives perfectly; couldn't be happier

They took me into the workshop to show me what the problem was and the brake pads that were on there basically don't fit properly (a few mm too small).. there was loads of give and that was what was causing the rattle, when he then put my Volvo OEM pads on over the calipers you could see there was no movement whatsoever. All good now. Thanks everyone for your help in diagnosing this annoying problem!

Ref rattle from rear wheel, if rattle goes when you touch the handbrake take car to any tyre fitter and ask them to tighten handbrake cable. Cheap and easy fix for mine!
