The engine thermostat is there to keep the coolant inside the engine at a constant temperature. It will, of course, go up and down a degree or two as the thermostat moves up and down. This keeps the engine running at its designed temperature for best efficiency. Modern engines run hotter, and that helps make them more efficient but rely on more sensors and an electric fan. They may have a 92º thermostat rather than an 82º one as often used in our engines. If you remove the thermostat you have no control over the engine temperature. The water pump will continuously circulate the coolant regardless and the amount of cooling will be dependant on the ambient temperature and the speed of the air through the rad, or lack of air if stuck in traffic. The temp gauge needle will swing back and forth, not what you want. In colder climates, the engine efficiency will drop and the heating system will have to make do with coolant that may never get anywhere near a normal temperature.
