Default Off Road Tyres

What are the best tyres to fit to an XC60 D5 for off road performance and ground clearance?

Tyres won't change the ground clearance unless you change the wheels for some other make, but you will be severely limited by the wheel arch.

As the wheel diameter changes the wall height changes to maintain a constant (or near constant) external tyre diameter and rolling circumference.

I have General Grabber AT tyres fitted but not on a Volvo.
They are not to noisy on the open road compared to some others.
If you do decide on a make please shop around as the internet is not always the cheapest.

Depend on your rim size.

If you have 17" rims you can probably go to 255/65/17. That would give an extra 13 mm of ground clearance. Any more you will need wider rims and it will make the speedo inaccurate and there may be clearance issues.

There will only be a limited number of tyres, I use Michelin Alpin LA2 winter tyres which are M+S rated but there more aggressive treads out there, but the come at the cost of reduced braking, increased fuel consumtion and noise.

There are quite a few around but all for 17" rims. General Grabber are well thought of for one. Or Cooper Discoverer.

Surely you'd look at suspension rather than tyres for improving clearance, due to the speedo issues others have mentioned (in Oz a significant increase in rolling diameter would also be illegal).

But at 230mm, the XC60 already has some of the best ground clearance for an SUV.

The first point is that isn't it alright as it is? Also bear in mind that, unlike an old Land Rover, the XC60 is not an entirely mechanical vehicle and relies a lot on optimised computer control. I would have thought it is not really something one would want to mess with (not unless you are going to do re-programming along with your other changes).
