I see that the wheel is dated 5/02. Might that mean that it's not suitable for P80-P1 cars?

Not at all, P80 C70s were made through the 2004 afterall. Nothing changed with regards to the mounting or operation of steering wheel, horn or airbags throughout the development of the C/S/V70s either. Direct bolt on, nothing to worry about.

Cookeh, are you sure a pre 1999 airbag will work with a 2000 and after car. I was under the impression that they are not compatible due to the different style of electrics. I don't know this for sure, it's just what I had heard.

SIPS and side airbags definitely aren't compatible, but I hadn't heard anything about the airbag in the wheels. Side airbags changed to electrical triggers, as I'm sure you know, but no change was made to the steering wheel airbag to my knowledge. Clocksprings are compatible across all models and years, and use same airbag connectors, so I'm not sure what could have changed, given that supplied power and trigger to airbag.

Swedespeed and Volvospeed have numerous accounts of doing such swaps, with no reported issues. I have not done it personally though, so can't say first hand.
